Proof Brewing Co. is excited to announce the grand opening of Proof Brewpub starting Friday, February 12th, at its South Monroe facility. The weekend-long celebration will showcase an innovative Southern cuisine menu featuring shareable pub favorites with fresh, locally sourced items from local farms.
The seasonally rotating menu will debut items like house-made pimento cheese fritters with local jam, fresh oyster BLT sliders, local house-made pickled vegetables, fish and hand-cut chips, and caprese Impossible sliders. Proof Brewpub will offer new and limited-release beers on draft and sell limited-release packaged cans on Friday. The Brewpub will unveil a unique classic hand-crafted cocktail list with small-batch spirits and boutique wine in addition to new food and beers. Proof Brewpub will expand hours of operation to Wednesday through Sunday starting February 17th after opening weekend.
“We’re excited to bring fresh, elevated flavors to the Brewpub experience with this new menu,” said Owner Byron Burroughs. “The team has put together a diverse cuisine to complement Proof Brewing Co.’s craft beer and new cocktail menu. We look forward to celebrating with everyone next week.”
Beers releasing in cans for Friday’s event:
- Beatam Vitam – Hazy IPA with Idaho 7, El Dorado, and Citra hops. Flavor notes of stone fruit, citrus, and papaya.
- Body Divine – Vanilla Peach Pastry Sour. Creamy body with tart, sweet peach flavors.
- Dark Beasties – Double Barrel (Maple Barrel & Vanilla Barrel) Aged Imperial Stout with Pecan, Maple, & Waffle. Two barrels, one maple and one vanilla, blended in harmonious perfection after aging for over a year. Pecans and waffles added for a velvety roasted touch in a breakfast-style delight.
The safety and well-being of guests and staff is a top priority at Proof Brewpub. Social distancing, limited occupancy, and face masks will be followed. Proof Brewpub has implemented enhanced sanitization standards and processes following all federal, state, and local guidelines. All tables are first come, first serve, with doors opening on Friday at 4 pm.
