Stuffed Pasta Essentials: Part 1

In this class, you’ll learn the foundations of handmade pasta. Chris will take the mystery out of which flour to use for each type of pasta, demonstrate old-world techniques of rolling pasta by hand, and teach you how to use modern equipment. In part one of this two-part series, we will make a ravioli known as Triangoli with a cheese filling and a Butter and Sage sauce. Then, we’ll make Spoja Lorda, a hand-rolled, filled pasta cut and shaped by hand, served in a beef broth.
