Sourdough Pizza with Michael

Please join Michael Hicks, owner of Expanding Circles, for an evening of sourdough discovery. In this class, Michael will cover multiple styles of pizza dough, including New York style, Neapolitan, and Focaccia. We will mix, shape and bake two styles of pizza and go over several options for toppings and the do’s and don’ts of homemade pizzas. This class will cover flour choices for pizza, gluten structure as it relates to pizza dough and different fermentation techniques to improve our pizza dough. With extensive professional pizzeria experience, Michael will share all the small wisdom he has regarding the world’s favorite dish…PIZZA! The class will provide a pizza dinner, as well as a small side salad to accompany the meal. Michael recommends a nice bottle of red or good lager to go with the meal.
