Chef Nikki, of Nikki Talks Food, brought the fire, the fun, and a whole lot of education to our Sauces Workshop at Browns Kitchen Center. Have you ever seen her YouTube videos? It was all of that entertainment, but live in person. I’ve never had a class that felt more like an intimate gathering of friends in the beautiful kitchen at Brown’s.
I was so surprised to walk in and find out that every student was a member of the Tallahassee Foodies Facebook group, so I got to meet a lot of people that I’ve chatted with so often here in this little community of ours. We sat at bistro tables, sipped wine, and ate great food that we helped prepare. Chef Nikki taught us three sauces that are the foundation for many other sauces. And as she said, “Chef needs sauce. Your proteins should always be served with sauce”.
We started with a hollandaise, whipped to perfection over a double boiler and served over thick cut toast. Followed by chicken gravy poured generously over roasted chicken, and finally a macaroni and cheese sauce from a flour, butter, and milk roux.
Afterwords, we had a feast! This was dinner hour, so when I was served a plate of roasted chicken, smothered in chicken gravy, with a side of our homemade macaroni and cheese, I was thrilled. Making new friends, eating a delicious dinner, and sipping on a little wine while learning the foundations of sauce, I consider that an amazing evening.
