Ohhhh this is taking me back!!! Before Tallahassee Foodies, I had a lifestyle blog and featured recipes all the time.  I worked for some big brands that would send me product in exchange for a recipe feature at my site, so I did a look of cooking, food styling, and photography. I’ve been missing all of that, so this was tons of fun for me.  

Tally Mac Shack (my addiction) has teamed up with Register’s Sausage for a #DirtyDog fundraising collab! Given the current crisis going on around us, Tally Mac Shack owner Justo Cruz wanted to do something to give back to the restaurant industry and came up with a brilliant initiative!  He teamed up with Cottondale-based Register’s Meat Company to create a series of cheese-infused smoked sausages, donating case after case to over a dozen local restaurants, and get this… the restaurants get to keep 100% of the profits!  How’s that for a #SausageStimulus?

I had a lot of fun with Danny Aller of Tallahassee Beer Society reeling in some of your favorite local restaurants for this Dirty Dog collab.  On board so far are Madison Social, Bumpa’s Local 349, Gordo’s Authentic Cuban Cuisine, Sage Restaurant, Canopy Road Café, Jeri’s Midtown Café, Backwoods Bistro, Fermentation Lounge, Riccardo’s Italian Restaurant, McGowan’s Hops and Grapes, Railroad Square Craft House, Coosh’s Bayou Restaurant, Dog Et Al, and Habana’s Boardwalk Cuban Restaurant.

I was lucky enough to score a few packages myself, so I had a great time coming up with some shrimp and grit bites topped with Tally Mac Shack + Register’s jalapeño cheddar infused sausage. I LOVE spending time in the kitchen on a beautiful Sunday afternoon.

Oh my word, these bites are amazing! I had leftover apple smoked gouda in the fridge from a recent cheeseboard that I mixed into some hot grits with butter, salt and pepper. I poured the grits into a greased baking dish, chilled for two hours, cut into circles, and then baked for 40 minutes at 400 degrees, flipping halfway through. Next, I cooked up the sausage and shrimp with some garlic, salt, and pepper, stacked it over my grit cakes, and garnished everything with green onions, bacon, and a bit more of the apple smoked gouda. So dang good.

Today, the Dirty Dogs can be found by ordering online at Tallahassee craft brewery Deep Brewing. Starting next week, the nine-inch links will then make their way to grocery stores such as Publix, Wal Mart, Winn Dixie, Harvey’s, Fresh 4 Less, Piggly Wiggly and Revel’s Meat Market.
